To be honest with you, I have a very special relationship with food, its not only that I like to eat, but I also enjoy cooking and discussing dishes.))
Today I will share with you one of my favorite soups recipe. Each member of my family adjusted this recipe to their taste, but the original belongs to my grandmother.
I will show you my “light” version of this soup, which is called Borsch.
- 3 chicken legs;
- 2 medium size beetroots;
- half of the cabbage;
- 3 carrots;
- 2 onions;
- 1 red paprika;
- 1 lemon;
- 1 can of white beans;
- tomato paste;
- olive oil;
- bay leaf;
- chicken stock and your favorite spices (optional).
Clean chicken legs, 1 carrot and 1 onion from the skin. Put them together with 2 bay leafs in the water to cook on the medium heat.
As for me, I hate pieces of cooked onions in the food. Thats why I proposing you this solution – put in the blander 1 onion and 1 pepper and mix it unless it looks like this:
Grate the rest 2 carrots and 2 beetroots. Add salt in the beetroot mix.
Preheat olive oil in the pan. Add paprika/onion mixture and fry a little bit. Add grated carrots and beetroot together with 2 spoons of tomato paste and fry it unless it looks like this:
Throw away from the casserole boiled onion, carrot and bay leafs. Take out 3 chicken legs, clean them from the bones and cut small.
Put back into the casserole chicken pieces. You my also add a little bit of ready chicken stock or some spice mixes like Vegetta.
Add to the casserole “fried mixture”. And boil around 1 min.
Add to the casserole cabbage and boil around 3 minutes.
Add salt, pepper, lemon juice and white beans. If you aren’t scared of the calories Im truly suggesting you to add some small pieces of potatoes as well. And voilá, its ready!
Different people have different tastes so at the end you can choose how to season it with variations of the ingredients in your plate, like garlic, dill or sour cream.
